This project describes the reuse of grape marc as an
alternative management process of solid by-products of winemaking and
at the same time it provides a method for the solution of environmental
pollution of wineries. In order to reduce environmental hazards, an
alternative biotechnology process will be developed on grape marc before
its use as a fertiliser or nutrient product.
Study of physicochemical characteristics of marcs and also of the
products produced by enzymatic digestion.
