Ella Resorts, a new collection of premium quality and excellent value resorts offers a variety of destinations to fulfil the ideal Hellenic holiday dream to all kinds of travellers.
The first Ella resort is to be launched in the diverse and multi-cultural Island of the Knights’, Rhodes. A stunning resort complex overlooking the sea, situated to one of the most distinguished seafronts of the island, Kallithea but still only 10 min away from the Old Town of Rhodes.
An ideal destination for families and couples, as the resort is divided into Elissa, a lifestyle adult friendly resort and Helea, a vivid family friendly resort.
Position Summary :
A sushi chef prepares sushi dishes in accordance with food health and safety regulations and Ella’s restaurant standards.
The sushi chef’s responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and placing orders for supplies as needed.
Also, should be able to customize customers’ orders according to preferences and food allergy considerations.
Scope :
Reports to Executive Chef
Creates a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
Prepares all types of sushi, including maki, nigiri and sashimi
Selects fresh fruits and vegetables to make high-quality dishes (like avocado, mango and carrots)
Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate
Manages food prep activities, like boiling rice
Coordinates with our wait staff to ensure proper cooking, considering special requests and food allergies
Prepares appetizers, soups and salads that are close to the philosophy of Japanese cuisine
Monitors food stock and place orders, as needed
Recommends new, modern recipes
Maintains hygiene principles in all cooking areas and clean your space at the end of the shift
Prerequisites :
Three or more years working experience in a similar role in the 5-star hotels or high-volume venues
Degree / Diploma in Culinary
Work experience as a or at an Asian restaurant
Good knowledge of various sushi types and sushi-rolling techniques
Ability to work both fast and accurately
Excellent knowledge of English language
Customer oriented
