The ideal candidate for the Head Chef position is charged with the duty of overseeing and managing all kitchen operations in the restaurant, including a diverse set of tasks such as the menu creation, food preparation, team management, vendor and customer relations establishment.
Coordinates and supervises the entire smooth operation of the kitchen
Participates in the menu preparations, selling policy and food tasting
Conduct effective shift briefings ensuring all staff are aware of VIPs, special occasions, daily specials, guests’ food allergies or restrictions
Encourages and appraises staff performance and provide feedback to improve productivity
Participates in the recruitment process and train new and current employees
Ensures compliance with ISO and HAACP regulations
Maintain a guest focus while performing duties.
Assume 100% responsibility for quality of products served
Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
Complete opening and closing checklists.
Refer to daily prep list at the start of each shift for assigned duties.
Promptly report equipment and food quality or shortage problems
Is consistently updated with our standard portion sizes, cooking methods, quality standards and kitchen rules, recipes, policies and procedures.
Stock and maintain sufficient levels of food products at line stations to assure a smooth service period.
Portion food products prior to cooking according to standard portion sizes and recipe specifications.
Qualification standards :
Minimum of five years of experience working in a similar role is essential
Must be fluent in English and knowledge of any additional language(s) is a plus
Previous experience in high end restaurant will be highly appreciated (Michelin Star etc)
